Prepare And Pack Your Lunch In 15 Mins

At a time, when 24 hours seem less for a day; everything we do is in a rush. And that specially includes our morning activities. The few hours that succeed waking up go by in a blur of running around, punctuated by the occasional drags of coffee from a big, steaming mug. In all the hullabaloo of getting ready for work, making & eating breakfast and finishing all household chores; you are hardly left with any time to pack your lunch. So, we thought of sparing you the pain of ordering in lunch every day at work by sharing a couple of healthy lunchbox recipes that can be whipped up in no time!


Mixed Pasta Salad

What can be healthier than a salad? But don’t worry; salads can be as tasty as they are healthy! A pasta salad is a bit different from the run-of-the-mill fruit or vegetable salads and can be a nice, filling lunch for the man or woman on the go.

Ingredients: Different kinds of pasta

A few fresh veggies such as red & yellow bell peppers, corn, broccoli, lettuce

A few fruits like olives, pineapple, pomegranate, apples

Olive oil or vinegar oil

Light salad dressing such as Italian dressing, Caesar dressing, Vinaigrettes etc.

Salt & pepper

Preparation: Boil 2 or 3 different kinds of pasta together. Add some salt while boiling. Cut the vegetables & fruits in small pieces. Mix the pasta with the cut fruits & veggies and toss them well in a big bowl with some olive oil or vinegar oil. Add salt to taste. Add in the dressing (you can even mix more than one dressing, but make sure the two go together) and toss well. Sprinkle pepper and pack in an airtight container to keep your salad fresh till lunchtime!


Grilled Tofu Sandwich

Sandwiches are easy to make, healthy and filling; thus making them a popular choice for lunchbox food options. There are innumerable recipes for healthy sandwiches that are mouth-wateringly good and you can always experiment with the fillings and sauces to churn out tasty lunches.
Ingredients: Sandwich bread or sandwich rolls





Olive oil

Cilantro sauce


Preparation: Cut the Zucchini into thick slices, slice up the tomato, slice the tofu. Wash and keep aside. Grease a flat skillet with olive oil and heat it. Put the tofu & zucchini slices on it and add salt to taste. Grill on both sides on a medium flame until they turn light brown. Toast the sandwich bread or rolls. Spread cilantro sauce on the inside of the bread, layer with lettuce leaves, followed by the grilled tofu, zucchini & tomatoes. Top off with some honey mustard sauce if you want. Cover up with the top part of the bread and press lightly to make the sandwich firm. Wrap up in foil and fill up your lunchbox!
